Hey party people. If you were looking for Delightfully Noted I promise you didn't land on the wrong blog. I'm sure the posting of a Greek Feta Dip recipe threw you off . No worries, the hubby also thought he had fallen and bumped his head when he saw me in the kitchen too.
As most of you know the hubz is the head chef around here. Okay, let's rephrase... thee ONLY chef around here. Unless you count toasting and scooping as cooking.
Strangely enough about once every three months I actually get this hankering for crafting up a meal.  Yesterday was one of those days.  No need to call the therapist. I promise the symptoms of "culinaryitis" usually dissipate within like minutes of starting in the kitchen.
Anyways, I've been wanting to make zucchini fries for quite some time now BUT of course you can't have fries with out some kind of dip. I have an extreme love affair with Greek yogurt. Seriously, most days I eat it for breakfast AND for an evening snack. So for me this dip is creamy, tasty, & a much healthier option then cream cheese or sour cream based dips.
Greek Feta Dip1/2 cup low fat or fat free Greek yogurt1/4 cup light mayo1/4 cup of crumbled feta cheese2 teaspoons of chopped chives1 teaspoon of garlic powderdash of black pepperdash of hot sauce
Combine & mix all your ingredients. Chill until ready to serve.
This dip went fantastic with the baked zucchini fries but would also pair well with wings or veggies.
If you're looking for a good zucchini fry recipe{I don't really think there are many ways to make them!}you can check out the one I used from the King Arthur Flour site.Bon appetit; which I know isn't really a Greek word but were well cultured around here.
